I don't love to cook, but I love to eat. Anyone else with me? A few weeks ago, a friend sent me a link to an easy enough recipe for quiche, and then I found another link from that one, and I've had quiche on the brain, but not enough motivation, so my produce drawer kept filling up, but nothing ever became of it all. Until today. Annalea gave me some Swiss chard from her garden over the weekend, and when I peeked into our fridge this morning, I realized that I'd better use that gorgeous chard before it wilted away, plus eggs & cheese & bacon? Okay, motivation to cook secured. I used this recipe as a very loose guide- mostly for cook time and how much cheese & how many eggs to use. The rest of the quiche I just took from our fridge, and so it will forevermore be known as Fridge Quiche. You're welcome.
*half of an onion (or however much you desire/have on hand)
*one & one half portobello mushroom
*5 big leaves of Swiss chard
*one dollop of heavy whipping cream
*one cup of feta
*two cups of shredded cheddar
*a few slices of leftover already cooked bacon
* 5 eggs (one of mine was double-yoked!)
*a dash of salt & pepper
I first sautéed the onion until it was lightly browned, then added in the chopped mushrooms and chard. This took about 15 minutes on low heat. Throw in chopped bacon toward the end.
In a bowl, beat together eggs, then add cheeses, cream, and salt & pepper.
Add veggies to egg mixture and stir.
I don't currently have a pie plate, so I just poured everything into an 8 x 8 glass dish and baked at 350* for 34 minutes.
Cool for about ten minutes and then enjoy!
I already bought broccoli, frozen spinach, and pre-sliced mushrooms for my next attempt & am getting quite excited about it!
